Special K Bars

In my last post entitled "Let The Christmas Baking Begin" I mentioned that I make several kinds of cookies / bars to put on gift trays for family and friends.  I was asked the question "so what ARE the different kinds of cookies you make?".  In my comment on the last post I listed the cookies / bars that I'm planning to make this year.  Now I'm going to give you a sneak preview of the Special K Bars, also known as "hogs" because everyone makes a hog (pig) of themselves when eating these goodies.  I've made a batch early so my daughter and I can "test" them to be sure I have the recipe just right!  (We always get the very first batch, then I make the "late" batch around the first of the new year so we can be sure they're as good as we always thought they were!)

Here are a couple of pictures I took of the ones I made today, then I'll give you the recipe for them, so you'll have time to get the ingredients and make some for your Christmas gatherings.

    

I have a tray for my daughter and her family, but the ones on the paper towel can be seen more easily.   Here's the recipe for you:

SPECIAL K BARS

1 c. white karo syrup          1 c. white sugar

Combine syrup and sugar into a pan; stir and bring to a boil.  Remove from heat and add:  1 cup peanut butter.  Stir until mixed, then add 6 cups Special K cereal.  Stir well until all cereal is coated.  Press into a 9 x 13 inch pan.  Sprinkle 1 cup milk chocolate chips and 1 cup peanut butter chips over the top.  Wait until the heat of the cereal mixture melts the chips then spread the chips with a knife, or put under a broiler a few seconds to melt the chips.

Cool and cut into squares.

You may have to do like I do and make a triple or quadruple batch in order for them to go around!
